In addition to their pilot episode "All in the Appearances," which is currently in post-production, Star Trek: Lexington announced that they have also started pre-production on their second episode, "Fool's Paradise." The Lexington website offers a summary of this new episode, which reads, "The U.S.S. Lexington picks up alien survivors from a ship which sent out what is presumed to be a distress call. However, not all as it seems as their new passengers behave badly and endanger the Lexington crew!"
No release date for "All in the Appearances" or "Fool's Paradise" have been announced yet, but information on planned Lexington episodes can be found here.
